Fall is coming to an end, harvests are almost complete and Halloween has just passed under our noses. Lonely pumpkins still grace some balconies. As popular as they are, these fruits are often abandoned and discarded after being used as decoration. Yet there are so many wonders to do with these big cucurbits. Here is one for you: A chai latte pumpkin & honey!

On a cold and dull Thursday, my girlfriend appeared in my office with a nice big cup of chai latte as comfort agains the gloomy weather. She had just created this recipe with our pumpkin puree and our honey. Never had I drunk a chai so very delicious. I was charmed by the complexity of the spices, the sweet creamy texture and the subtle aftertaste of honey.

For 6 to 8 portions  |  Preparation time: 35 min.
8 cups of water
25 cardamom pods, crushed
4 pieces of dried ginger
4 cinnamon sticks
15 cloves
1 tsp of pink/black pepper
1 tbsp of Jamaica pepper
5 star anise
3 black tea bags (optional)
6 tbsp of raw honey
1 3/4 cup of pumpkin puree
3 cups of milk, soy or almond

Place water and spices in a pot and bring to boil. Reduce heat, cover partly and simmer gently for about 45 minutes. Strain the mixture and discard the spices.

For a caffeinated chai, put the liquid back in the pan and add the tea bags. Infuse for 5 minutes and remove the bags.

Finally, combine the spicy-tea mixture, honey, pumpkin puree and milk in a blender to obtain a creamy consistency and a thick foam.

Then all you have to do is serve warm and enjoy!
